Mathanga/Pumpkin Kaalan
Kaalan is keralites all time favorite. It's a must recipe in "Kerala Sadya". Kaalan can be made with palantain and I think it's the usual one. Mathanga kaalan is also as tasty as Plantain kaalan. 
  • Ripe Pumpkin/Mathanga - 1 portion (cut in to small cubes)
  • Yogurt/Laban/Curd/Buttermilk - 1 cup
  • Red chilly powder - 1/4 tsp
  • Salt
  • Coconut - 1/4 cup
  • Cumin seeds - 1/4 tsp 
  • Green Chillies - 1
  • Turmeric Powder - 1/4 tsp
  • Coconut oil - 2 tbsp
  • Mustard Seeds - 1/4 tsp
  • Small Onion - 1 sliced
  • Dried Red Chilly - 1 
  • Fenugreek Seed Powdered - 1/2 tsp
  • Curry Leaves

  • Grind all the ingredients in the grinding portion to a smooth paste and keep it aside
  • Peal,clean and cut pumpking in to small cubes
  • Cook it using 1/4 cup water,salt and Red chilly powder. Cook it well.
  • When done, smash it and keep aside.
  • Add the ground paste in to it and mix well.
  • When the mixture got cool, add buttermilk in to it and mix.
  • Heat oil in a pan,splutter mustard seeds,small onion,red chillies, and curry leaves and then add fenugreek powder so that it doesn't get burnt (You can also use Fenugreek Seeds, I used powder because it will mix up with the curry and won't get a bitter bite)
  • Keep it a while, and serve along with rice.

Bread fruit is similar to jack fruit, but this is harvested before ripening. Can make thoran, theeyal and chips. Here I made a simple thoran. Cheema chakka becomes very soft when it's cooked.
