Uzhunnu Vada and Chutney

Uzhunnu vada or medu vada is a very common snack in south India.Try this you will surely love it.

Ingredients


Vada
  • Urad Dal - 1 cup
  • Shallots chopped - 5-6 
  • Green chili chopped - 1 big
  • Pepper corns crushed -1tsp
  • Ginger finely chopped - a small piece
  • Baking Soda - 1/4 tsp( Optional)
  • Curry leaves chopped-1 stem
  • Salt to taste
  • Oil for deep frying 
Chutney 
  • Bengal gram(Kadalaparippu) - 1/2 cup
  • Grated coconut - 1 cup
  • Green chillies - 1 nos
  • Ginger - 1/2 inch piece
  • Tamarind pulp - 1 tsp
  • Mustard seeds - 1 tsp
  • Asafoetida(Kayam) - A pinch
  • Salt - As reqd
  • Coconut oil
  • Curry leaves

 

 

Instructions

Vada
  • Clean and soak Urad dal for 1-2 hours and drain it
  • Grind it to a smooth paste without adding water (can add a little water if the batter is too thick)
  • Add the urad dal paste in to a bowl and add chopped onion,ginger, green chiles, pepper corns and curry leaves(& baking soda if using)
  • Heat oil in a pan
  • Wet your palms and  take a portion of the dough.
  • Make vada shape with a hole in the middle.
  • Put the vada in to the hot oil and fry till golden color.
  • Serve hot with chutney    
Chutney
  • Grind bengal gram to a fine powder.
  • Add grated coconut,green chilly,ginger,tamarind juice,salt and water.
  • Grind it to a smooth paste.
  • Mix this paste with bengal gram powder.
  • Heat oil in a pan and splutter musturd seeds and curry leaves.
  • Serve with idili and dosa
